Organic Guatemala

dark chocolate / apricots / cherry

Coffee Taste

Packed with Dark Chocolate and Nutty flavours – expect notes of almond and walnut with the sweet finish of apricots and cherry.

This is Guatemalan coffee at its best, clear and bold flavours resulting in a full bodied and smooth cup, regardless of the brew method.

Coffee Origin

This dark and chocolatey Guatemalan organic coffee comes from Huehuetenango, a municipality in the western highlands of Guatemala.

Running up to the border with Mexico and encompassing a lot of microclimates across its undulating hills and valleys, this is a Spanish speaking area, but it is not unusual to hear Mam, highlighting the Mayan ancestry of the area.

Produced by a small number of farmers via the Fedecocagua cooperative, an organisation that provides access to agronomists, wet processing facilities, seedlings and microfinance support. This supportive environment is then bolstered by providing dry-milling facilities, greater quality control and all-important access to a global customer base.

This organic coffee is distinctive of the region and possesses a character and flavour that won’t fail to impress.

Coffee Origin

This 83.5 SCA scoring, washed coffee is alive with vivid citrus flavours. Look out for green apple, lime and nutmeg – there’s even a hint of strawberry in this well balanced and pleasingly acidic organic and fairtrade bean.

This single origin Colombian coffee is produced in Tolima, one of the 32 departments of Colombia, located in the Andean region, in the center-west of the country.

When ripe, the coffee cherries are picked and go through an initial flotation sorting to remove under-ripes, sticks, and general debris before passing through a pulping machine and working their way down the washing channels to the fermentation tanks. Here, they will sit for typically 8-14 hours, before moving to the drying patios or guardiolas for controlled drying down to 10-12% moisture.

Typically in Colombia, this is carried out on the farm, with processed cherries then being taken to a dry mill for careful grading, tasting, and blending. The coffee is stored in parchment until ready for export, when it is hulled at the dry mill and bagged for shipping.
